GF Vegan Waffles

  • 2 cups Bobs Red Mill All-Purpose Gluten Free Flour
  • 3 Tb sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • *chia eggs
  • 1 1/4 cups coconut milk (I used the canned milk, reduced fat)
  • 1/3 c vegetable oil


*To make the chia eggs, put 2 Tb chia seeds in 6 Tb water. Stir and let sit for 10-15 minutes. It will gel and thicken.

Sift together the flour, sugar, salt, & baking powder. In a separate bowl, mix the chia egg in with the coconut milk. Make a well in the center and pour the milk/egg mixture in. Stir until just combined. I like to add about 1 tsp of vanilla extract and some cinnamon and nutmeg. I also added 1/4 cup of organic pumpkin. 
Add the vegetable oil and mix until it’s just moistened. Heat up your waffle iron, and cook for about 3 minutes, or until crisp and lightly browned.
